Saturday mornings are totally the best! Nobody can argue with that. Do you know that feeling when you wake up and realize it is the first day of the weekend?

This weekend is a bit more special than other, because one day longer due to Independence Day. Therefore tomorrow I’m taking part in The Independence Day Run in Gdynia. I look forward to see streets full of sports freaks instead of traffic jams. 🙂

After today breakfast I came up with fast cookies, which will be perfect snack rich in carbohydrates before running that won’t unnecessarily weight my stomach.

I used peanuts, because among all nuts they are the richest in protein (actually they are legume the same as bean) and coconut oil – so they are 100% veg.

1. Mix all ingredients together.
You can crash peanuts in mortar – I used whole ones.

2.The dough should have a consistency that allows it to be rolled out.
(If the dough is too wet – add flour, whereas if you can’t link it together – add water. It all depends on quality of used ingredients).

3. Make a favourite shaped cookies

4. Bake 15 minutes in 200 C (390 F).
